- Wild Ale fermentation with Sémillon grape juice
Oenobier Sémillon is a wild fermented beer from the American Trillium brewery. Thanks to the refermentation with fresh grape juice of the Sémillon variety, it acquired a winey character and notes of fresh pear, lychee and hand-grated lemon peel. Your palate will also be filled with a bouquet of floral notes.
French grapes of the Sémillon variety have a golden skin and are valued for their full and fresh flavor with delicate hints of citrus and tropical fruit. Sémillon was once one of the most widely grown grape varieties in the world and is still the main variety for Sauternes dessert wines to this day.
