Tart of Darkness is a sour stout aged in oak barrels. This beer was brewed with stout in mind, so the journey into tartness began with fermentation in large oak vats at Bruery Terrux, where it was treated with a special blend of acidifying bacteria and wild yeast cultures. After a slow but insanely active fermentation, the beer was poured for extended ageing into a dedicated collection of used barrels. These included emptied bourbon barrels in which beers like Black Tuesday were previously aged.
This special edition is created using blackcurrants to give this incredibly dark and roasty sour stout some extra ripe, jammy notes.
