Wild #13 was brewed in January 2020 and is a project that sits between the worlds of cider, wine and beer. Specially selected grapes that were used to create this drink were personally collected by the brewers in a small, local vineyard Jadwiga, which is located less than 20 km from the Browaru Stu Mostów. These were combined with the beer base and left to refer for over 12 days.

The beer is filled with aromas of cherries and red fruits balanced by a slight tartness and funky notes.

During the fermentation process, the beer was first kept in steel tanks with a blend of 2 Saison strains, and then re-fermented in wine barrels with a house blend of wild yeast and bacteria. The last stage of fermentation took place thanks to natural yeast from the fruit and during lagering in the bottle.

A small amount of Hersbrucker variety was used for hopping.

The colour of vivid cherry and pink foam is very pleasing to the eye. It is unpasteurized and thus can be aged for years and change its flavour profile. Do you also wonder how things will change?

This beverage will go perfectly with:

sirloin steak of deer with blackberry sauce,
buttery rolls with grilled halloumi cheese and bear garlic and cherry sauce,
yeast cake with fruit, crumble and vanilla ice cream.

Everything ok, the package is good but i'd like an extra protection for the down part of the box. The base of some cans getting hit by delivery company and one of them was about to burst out. Anyway, happy with PM as always and the quality of the polish beers.
