Another instalment in the popular WILD series from Stu Mostów Brewery, where it experiments within three worlds: beer, wine and cider. This edition managed to get a vanilla and cherry flavour thanks to Madagascar vanilla beans and local "Łutówka" cherries. Here the base is a barrel-aged Saison style base.
Fermentation took place in steel tanks with a blend of two Saison strains. Secondary fermentation in wine barrels with a blend of wild yeasts and bacteria. It was refermented with natural wild yeasts derived from bottle conditioned fruit.
