The wheat symbol of Wrocław - Schöps, was brewed in the 16th century and was considered one of the leading beers of contemporary Europe. The history of this beer ends more than two centuries later, and no recipe has survived to this day. Together with an international team, Browar Stu Mostów recreated this style, mainly based on chronicle descriptions of the taste of this beer and knowledge about the former brewing in Lower Silesia. The beer had a unique, honey and nutmeg aroma, it was hopped sparingly, so it was characterized by a considerable sweetness, slightly counteracted by the acidity of the lactic acid bacteria present in the pores of oak barrels in which it was fermented and aged.
