Gueze is a mix of lambics from different ages, in this case, 1, 2 and 3 years old. Unfiltered and unpasteurized beers mature in the bottle for at least six months after blending.
Spontaneous fermentation, patient maturation in oak barrels and the continuous evolution of the ecosystem in the bottle result in an exceptionally complex and elegant natural beer. No two bottles are alike because there are many variables in the blending process, different barrel sizes and shapes, and different ageing ratios in a lambic blend. Bottle 3 Fonteinen Oude Gueuze can mature for several decades. Aromas and flavours will evolve from vivid, fresh citrus, spicy and grassy notes to a mellow oak bouquet of stone fruit.
