The process of making Oude Kriek involves the maceration of hand-picked whole cherries on young beer for at least four months, in the proportion of one kilogram of fruit per litre of lambic. Kriek Lambic is then re-blended with the younger lambic to obtain a minimum intensity of 35% of the fruit, and bottled immediately afterwards. These bottles are then stored in the cellars for at least five months to allow the lambic kriek to develop into a beautiful, traditional and sophisticated Oude Kriek. The 3 Fonteinen Oude Kriek will age perfectly thanks to its pleasant tartness and organic notes of almonds and cinnamon.
