- A wild blend of beers, dry hopped for 3 months and macerated with Sicilian sage.
Spong is a mix of wild beer, matured in oak barrels and matured saison beer. Saison was fermented in a large oak vessel and then transferred to oak barrels for another 6 months. Before blending, Saison was lightly dry-hopped for another 3 months. Sicilian sage was added to the final blend and macerated several days before bottling.
