Gueuze Cuvee Marie-Catherine is a spontaneous fermentation beer prepared as part of the beer family tree project prepared by Pierre Tilquin. The beer was prepared in honor of Pierre's mother - Marie-Catherine Tilquin-Rousseaux. Each beer, dedicated to members of the Tilquin tree, is prepared from a different mixture of lambics, matured in oak barrels. Cuvee Marie-Catherine is a blend consisting of 40% one-year lambics, 30% two-year-old lambics and 30% three-year-old lambics. Each of them was refermented and matured in the bottle for a year.
