WILD #12 was brewed in January 2020. This time, in a bottle from the latest series, the Stu Mostów Brewery has closed the blend of a barrel-aged Saison beer and maximum aromatic "Inka" peaches from the Owocowe Zacisze farm, as well as local "Łutówka" cherries from the Ireneusz Rudnicki Farm. The beer owes not only its exquisite aroma but also its "rose" colour with a delicate head when poured into a glass.
The beer is mildly hopped. In this case, the German variety Herbsucker was used. The first fermentation took place in steel tanks with a blend of two saison strains, and the secondary fermentation took place in wine barrels with a blend of bacteria and wild yeast. Finally, there was a re-fermentation using natural wild yeasts derived from the fruit. The fermentation time was not short, so it was left in barrels for several months to develop its character.
The beer will go well with dishes such as: deer sirloin steak with cherry sauce and dumplings, grilled halloumi cheese with cherry jam. And also with desserts: vanilla panna cotta, rustic yeast cake with cherries and crumble.
